Fish Cakes

Ingredients
  

  • 400 g mackerel fillets or similar firm fish
  • 1 bay leaf
  • 150 ml water
  • 150 ml milk
  • 300 g potatoes, preferably maris piper peeled and cubed
  • .5 t lemon zest
  • 1 egg
  • flour for dusting
  • 3 T vegetable oil
  • 2 lemon wedges to serve, garnish

Instructions
 

  • Poach the fish with the bay leaf in water and milk in either a frying pan or in the microwave for 2-4 minutes. The fish should be only just cooked and soft to the touch. Let stand to continue to gently cook through.
  • Cook the potatoes with a pinch of salt in either a pot of water or microwave until tender.
