
Fish Cakes
Ingredients
- 400 g mackerel fillets or similar firm fish
- 1 bay leaf
- 150 ml water
- 150 ml milk
- 300 g potatoes, preferably maris piper peeled and cubed
- .5 t lemon zest
- 1 egg
- flour for dusting
- 3 T vegetable oil
- 2 lemon wedges to serve, garnish
Instructions
- Poach the fish with the bay leaf in water and milk in either a frying pan or in the microwave for 2-4 minutes. The fish should be only just cooked and soft to the touch. Let stand to continue to gently cook through.
- Cook the potatoes with a pinch of salt in either a pot of water or microwave until tender.
